Homeschool Mother's Journal






In our homeschool this week…
We're just plugging along day by day.  I really need to take more pictures of what we're up to! We did make some hard tack and "Mayflower pottage" and had ourselves a Mayflower dinner.  I also bought prunes, canned herring (yuck..and I like fish), raw cabbage and dried beef.  The kids actually loved the pottage which was made with a ham hock, split peas, barley, carrot and onion.  I will probably make it again for their lunch this week.  They also liked the dried beef.

Places we’re going and people we’re seeing…
This week 3 of the kids have dentist appointments and Katie (15) is having her wisdom teeth out.  I wish we were going someplace fun!

My favorite thing this week was…
Hearing my 11 year old son with Down syndrome reading a page from our reading curriculum. So proud of him!  Here is a short video of it.  (At one point in the video you hear me say, "No" but I'm talking to one of the other kids and not Connor.)


What’s not working for us…
I was lamenting to my husband this week that I miss the old days when my oldest kids were young and I literally stayed home almost all week.  We went to a church that only had a Sunday morning service...and except for grocery shopping and church I was able to just stay home.  I am finding it difficult to have to go somewhere almost every day....from music lessons to my 16 year old needing a ride to work, Dr and dentist appointments and on and on....it's always something and we don't even do sports or co-ops or anything.  I have no idea how to slow things down, but I sure wish I could!

What is working for us…
IEW's Primary Arts of Language is working for us.  I'll be reviewing it soon and I can't wait.  I love this curriculum! (The video above is from the curriculum.)

Things I’m working on…
I'm working on my final reviews for 2012.  I'm also getting ready to start Christmas shopping.  I do have a few things already but it's time to get serious. :)  I'm learning Christmas cantata music too.  (I love Christmas.)

Stick with It Saturday

It's Stick with it Saturday and I have nothing fantastic to write about this week.  I was up .2 at WW this week (which was fine since I had a big loss last week.)

I am so discouraged about not being able to run though.  I was doing better and went for a 2.5 or so mile run earlier in the week and my neck/back pain came back again.  I really hate that I can't just run every other day like I did all summer.  The weather is perfect for it...and I can't get out there and run.  I don't know if I should give up or just give myself some more time for healing or what.

Goal for the week: stick to the plan!

Obese No More! How I Lost 85 Pounds...

After 2 years of hard work, I have finally hit a huge milestone.  Not only did I lose 85 lbs.  I have brought my BMI down to a level that is out of the obesity category.  It has been over 20 years since that was true for me....much of that was at a morbidly obese level.  (I think I've mentioned on my blog before how much I hate the word obese. blech!!)

I thought I would share a bit about my journey, a few pictures and some tips for how I have done this (and continue to lose weight.  As I am at the top of the overweight chart now, I have more to lose before I am considered a healthy weight.)

I began this weight loss journey in October of 2010.  If anyone had said to me, 2 years from now you will have lost 85 lbs but you won't be at goal I would have found that to be a complete discouragement and probably would have given up that first week.  I know it sounds silly but when you have so much to lose, you just want it to go away-- yesterday.

Rather than go into the details of the beginning stages of this journey again you can read How I Lost 50  Pounds that I wrote a year ago if you are interested.  Though I lost about 5 lbs over the holidays last year at the start of 2012 I just felt like I was at a huge plateau.  In February, half of my family was ill with the flu which turned into pneumonia for 2 of my children and my husband who ended up in the hospital.  During his hospital stay, I found out I was pregnant.  Obviously being pregnant puts a hold on any weight loss plans.  I ended up miscarrying a few weeks later...just one week before my birthday.  I was finding some excuses for eating a little more.  I wasn't gaining but still felt "stuck".  I needed a change.

In April, my friend Amanda, that I mentioned in my How I Lost 50 Pounds post had just decided to go back on Weight Watchers.  I had never been interested in joining Weight Watchers.  When I heard that most fruits and vegetables are "free", I was so intrigued.  A short time later I decided to join.  I purchase a monthly pass and that entitles me to meetings and all of the online tools.

Tips for Losing Weight

1. Be Persistent.  Do not let one mistake derail you. If you eat more than you should, just get back on track at the next meal. No guilt, no regrets, just move on.

2. You do not have to exercise.  I am at the point now where I like to exercise.  I started running in the spring and I can even say that I love to run.  But, there were times during the last 2 years that I just didn't feel like exercising, so I didn't and I still lost weight.

3.  There is no perfect way to lose weight.  Pick something and get started.  I think it is better to make lifestyle changes rather than try some fad diet that you can't live with long term.

4. Track everything.  Write it down.  Just do it!

5. Make healthy choices, but do not deprive yourself.  Honestly, I eat popcorn and ice cream every day.  When I was on the 400 Calorie Fix diet I ate popcorn and chocolate every day.  I also go out to eat every week.

6.  Find a buddy to lose weight with.  That is so helpful.

7. Get a pedometer and start moving more.  (I know what I said about exercise, but just setting a goal of getting a certain number of steps each day is highly motivating to move more and it's just good for your health!)

8. Don't say, "I can't eat that."  You can really eat whatever you want...but, is it worth it?  I say, "I don't eat that anymore."  Sometimes I do eat things that are high in calories, but I eat it in moderation or sometimes only just have a taste.  I would not have been able to do that in my first year of making these lifestyle changes but I am now at a point where I can do that and know that I'll be OK.

9.  Every event does not have to be an eating event.  I sometimes eat before I go somewhere so that I am not hungry.  That way I can have something small or not eat anything if there are no good choices. More often than not, you can find fruits and veggies at most events.

10.  Plan ahead.  If you know you are going out, try to plan what you will have ahead of time.  I get into trouble when I arrive someplace hungry without a plan.

The Pilgrim Story

The Pilgrim Story is an online course from Dayspring Christian Academy (a school in PA) for students in Grades 3-6.  It is a self-guided, interactive power-point style history course. The Pilgrim Story is taught using the Principle Approach which holds a providential view of history. Students learn about Christian character, Christian liberty and other biblical principles such as self government, hard work and perseverance.

The Pilgrim Story is divided into an Introduction, 5 Units and a Virtual Field Trip to Plymouth, MA.  Each of the 5 units are broken down into lessons designed to take 30-45 minutes to complete.  There are 17 lessons in all.  Students create a notebook (using a 3 ring binder) from downloadable pdfs that include note sheets,, quotes, maps, activities and more.

Each lesson has fill-in-the-blank note sheets. When a pencil is shown on the
screen, students are to complete the note sheet with the underlined information.

You can jump to any part of a lesson and access the pdf files using tabs at the bottom of the screen.

At the end of each lesson, there are 2 options for tests.  One is an interactive test that students complete online and receive a score at the end.  Students have the option to repeat the tests if you wish.  The second option is an essay test.  You can download essay questions if you choose that option. Interactive test scores are available in your account. (The most recent result will show.)

My daughter, Emma (9) has been doing this course.  I set up her notebook on the first week we started.  I print out the lessons one week at a time.  The pdf's all need to be downloaded individually and it is time consuming. I would like it better if all of the pdf's were one document, or at least one document per unit or even one per lesson.

Emma seems to really like this course and actually loves taking the tests.  She likes to take them multiple times to improve her score.  I like this because I know she is really learning the material with this constant review.

I am not a huge fan of the power point style of lesson and wish there was more video, but I love the idea of building notebooks and the material is excellent.  I also really like that Emma can work independently and once the pages are printed I really don't have to do anything.

Depending on your students and how much time you want to invest in the course you could complete it in just 5 weeks (perfect to start now and finish before Thanksgiving) or you could stretch it out over a longer period of time.  Emma takes 1-2 days to complete a lesson.  Some lessons are longer than others.

There are activities that include mapping, recipes, building a model pilgrim house, building a model wetu, drawing and optional writing activities.  Most of the "fun" ones are in the last 2 units which we are just starting.

At the end of the course, you are taken on a virtual field trip of Plymouth, MA.  You are shown various landmarks around Plymouth as well as the Mayflower II and Plimoth Plantation.  I was a bit disappointed with the amount of coverage from The Plantation which, in my opinion, really is the highlight of visiting Plymouth. However, students will get a very complete tour of monuments and places of interest in Plymouth.

We were able to visit Plymouth this weekend.  The Pilgrim Story was a great introduction to the Pilgrims (we've completed 3 of the 5 units).  I do recommend it and think it would be valuable even for those older than the recommended ages. (I don't think it would hold the attention of younger children.) However, the price is more than what I'd be willing to pay even if more than one of my children were participating. It is just more money than I would spend on a short course for an elementary student.

If you can't take your child to Plymouth, this might be the next best thing.  If you can take them, this will be a wonderful course to use before or after your trip.

Menu Plan Monday

I am trying 3 new recipes this week.  I can't wait to see how they turn out!

Monday: Apple Marinated Pork Chops with Cabbage* and rice

Tuesday: Maple Mustard Glazed Pot Roast with Winter Vegetables* (crock pot recipe)

Wednesday: Spicy Sweet Potato and Corn Chowder with Ham* and rolls
 (Made this for the first time last week.  It was delicious so we're having it again.)

Thursday: Three Cheese Zucchini and Spinach Lasagna *

Friday: Spaghetti and bread

Saturday: Pan-seared chicken, roasted butternut squash and stuffing

Sunday: leftovers or something easy like sandwiches or pancakes

The Homeschool Mother's Journal





In our homeschool this week…

This week went by so fast it seems like a blur.  I am always thrown off when we have a Monday holiday.  Two of the girls started back to their music lessons.  We are just plugging away.

I’m reading…

I've been reading the Bible chronologically since I finished the Bible in 90 days back in March.  This week I decided to use a Beth Moore study for my personal devotions.  I am deciding between one on the life of David and the other on Jesus.  I am pretty sure I've decided to buy the one on Jesus (for my Kindle.)

I also read Diagnosis Death: Prescription for Trouble series #3 by Richard Maybrey.  It was free (at some point) so I had it on my Kindle. It was an enjoyable read.

I’m cooking…

This week I made a new recipe from the newest Weight Watchers cookbook, I ♥ Leftovers.  Here it is:


Spicy Sweet Potato and Corn Chowder

2 tsp. olive oil
1 onion, finely chopped
2 stalks celery, chopped
2 cloves garlic, minced
2 tsp. flour
1/4 tsp. cayenne
1 (32-ounce) carton reduced sodium chicken broth
1 large sweet potato, peeled and cut into 1/2" cubes
1 chipotle en adobe, minced (I left this out because I didn't have any and thought it might be too hot)
1/4 tsp. salt
2 cups fresh or frozen corn
1 (6-oz.) reduced sodium lean ham steak, trimmed and cut into 1/2" cubes (I used Canadian bacon)
1/2 cup fat free half and half
 T. minced fresh chives

 Saute onion, celery and garlic in oil over medium high heat, stirring frequently until vegetables are soft (about 5 minutes). Stir in flour and cayenne and cook, stirring constantly, 1 minute.  Add broth, sweet potato, chipotle, and salt; bring to boil. reduce heat, cover, and simmer until potato is tender (about 10 minutes). Stir in corn, ham and half-and-half and cook until heated through. Sprinkle each serving with chives.

Serving size (generous 1 cup)

Stick with it Saturday


It's Stick with it Saturday and I'm getting this posted here at the end of the day.  We were out all day and I didn't have time until now.

 Last week, I was up a little at Weight Watchers and not happy about it. (I had no reason to be up.)  This week I was down 2.6.  I've now lost 85 lbs. :)  (This is why my goal is always...stick to the plan.)

I have been working back up to running again.  Tonight was the first time that I ran more than 2 miles (I was out for almost an hour) since my 5K two weeks ago around the time when I hurt my neck/shoulder/back.  I feel pretty good so hopefully I can get back in a running routine.  It was cold here today and when I got back from my run I got a chill.  I ate some soup and finally warmed up but next time I think I need to cover my hands and I'm not sure what else.  I was all sweaty so I don't want to bundle up too much!  The other problem I am having is finding a time to run since there is so much less daylight and I'm so busy homeschooling.


Goal for the week: stick to the plan!
